Avaliação de métodos titulométricos para determinação do grau de desacetilação em quitosana/ Evaluation of titulometric methods for determination of deacetylation´s degree in chitosan

Abstract


A quitina é o segundo biopolímero mais abundante depois da celulose, é encontrada nos exoesqueletos de crustáceos, insetos e moluscos, sendo a sua estrutura composta de amino-polissacarídeo linear. A quitosana é um polissacarídeo catiônico, sendo produzido a partir da desacetilação da quitina, caracterizada principalmente pelo grau de desacetilação  e pelo peso molecular, sendo que esses parâmetros afetam fortemente suas propriedades físico-químicas e biológicas, tais como solubilidade, hidrofilicidade e cristalinidade. O grau de desacetilação pode ser obtido por titulação potenciométrica e condutivimétrica, sendo empregado basicamente para diferenciar quitina e quitosana, uma vez que a presença de grupos amino na estrutura da quitosana é o indicador que confere a este polímero muitas propriedades específicas. Em virtude disso, esta pesquisa teve como objetivo comparar métodos de titulação já descritos na literatura, para determinar o grau de desacetilação ( ) de uma amostra de quitosana sintetizada no Laboratório de Sólidos Inorgânicos em comparação com uma amostra obtida comercialmente.
