Abstract

Nas últimas décadas, os pesquisadores deram mais atenção aos benefícios dos alimentos fermentados para a saúde, como o Kombucha, uma bebida oriental tradicional feita geralmente de chá adoçado fermentado por um consórcio simbiótico de bactérias e leveduras. Neste trabalho, uma bactéria ácido láctica (BAL) foi isolada de um Kombucha brasileiro e identificada como Pediococcus acidilactici, usando primers da região V3-V4 do gene 16S rRNA. Testes de segurança foram realizados, incluindo resistência a antibióticos, atividade hemolítica, gelatinase, coagulase e DNAse. Os critérios de funcionalidade foram testados a partir da exposição a pH 2,0 por 3 h e também pela atividade antimicrobiana contra Esherichia coli, Staphylococcus aureus e Salmonella sp. O isolado foi considerado sensível a cinco antibióticos e apresentou resultados negativos para atividade hemolítica, gelatinase, coagulase e DNAse. Em relação aos aspectos de funcionalidade, a exposição a baixo pH reduziu a sobrevivência da cepa, e quanto à atividade antimicrobiana, o isolado foi capaz de inibir o crescimento de E. coli. O isolado de Kombucha foi identificado como um candidato à segurança para consumo humano e aspectos interessantes de funcionalidade que podem fornecer uma consideração relevante sobre uma cepa originada de bebida fermentada e seu possível potencial probiótico.
