Abstract

Este trabalho teve como objetivo desenvolver e caracterizar bebidas lácteas adicionadas de farinha do bagaço da maçã e hidrolato da canela encapsulado.  Foram elaboradas cinco formulações com diferentes concentrações de farinha do bagaço da maçã (0, 1 e 3%) e hidrolato de canela encapsulado em soro de leite (0, 0,5 e 1%). As amostras foram avaliadas quanto às propriedades físico-químicas, antioxidantes, microbiológicas, sensoriais e reológicas. Os ingredientes adicionados nas formulações não causaram diferenças significativas nos teores de umidade, cinzas, proteínas e lipídeos. A amostra contendo farinha do bagaço de maçã (3%) e hidrolato da canela (1%) apresentou maiores teores de fibras (1,10%), compostos fenólicos (23,61 mg EAG/100 g) e atividade antioxidante (2,43 µmol de Trolox/100 mL). Não houve alteração na luminosidade (L*) das amostras quando comparadas com o controle (sem adição de bagaço e hidrolato), os quais variaram de 63,78 a 67,78. Os atributos avaliados no teste de aceitação das formulações variaram entre 6 (gostei ligeiramente) a 8 (gostei regularmente). Todas as formulações apresentaram comportamento não newtoniano e pseudoplástico, e o bagaço de maçã contribuiu para o aumento da viscosidade aparente. O uso de subprodutos, tais como o bagaço de maçã e o hidrolato da canela, mostrou ser promissor para melhorar o valor nutricional de bebidas lácteas.
