Abstract

RESUMO

 

Uma variação na ternura se torna uma grande preocupação para a indústria. Este estudo teve como objetivo investigar a qualidade do músculo Longissimus thoracis de touros Nelore ( Bos indicus ) em diferentes grupos de maciez de carne. Uma população de 90 animais, foram selecionados três grupos experimentais de carne, intermediária e dura, por meio de análise da força de cisalhamento (SF) e índice de fragmentação miofibrilar. As características da carcaça (peso da carcaça quente e rendimento da carcaça) não apresentam diferença (p> 0,05) entre os grupos experimentais.O grupo de carne macia (SF = 3,9 ± 0,7 kg) apresenta uma diferença significativa (p <0,05) para uma área dos olhos, espessura do toucinho, escore de marmorização visual, conteúdo lipídico intramuscular e leveza da carne em comparação com intermediário (SF = 5,6 ± 0,7 kg) e grupo de carne dura (SF = 7,9 ± 1,4 kg). Como reduzir a diferença de diferença (p <0,05) entre os grupos de carne e dura 24 horas e 07 dias após o abate.
